Have you tried parsnips? If not you are seriously missing out! This is by far one of our favorite vegetables in the Kremer house! Parsnip fries are Paleo friendly and, while a little higher in carbs than some veggies, are still lower in carbs and higher in fiber than potatoes and sweet potatoes. Parsnip fries are an awesome lower carb option for all those carb counters out there, or just a great alternative for those looking to add some variety to the dinner table.
Ingredients:
- About 2 whole parsnips, sliced into equally sized portions
- 1 tbs olive oil, duck fat, avocado oil, bacon grease or cooking oil of choice
- Pinch or two sea salt
Steps:
- Preheat oven to 350
- Remove butt from parsnips then peel and slice into equally sized portions (preferably the general size and shape of french fries)
- Toss parsnips in oil and place on baking sheet
- Bake for about 20-30 minutes or until tender and lightly browned
