Sweet Potato Crock Pot Chili

There really is nothing better than a nice hot bowl of soup or chili on a cold winter day. In the Kremer household, soup is a very popular dinner item in the months between October and March. As you can imagine, this gives me plenty of opportunities to try out tasty new soup, stew and chili recipes. I came up with this recipe after seeing a less healthy version in a popular cooking magazine. While I was a little hesitant about combining sweet potatoes with beans and ground meat, this tasty chili turned out to be an instant hit. I hope your family enjoys it as much as mine does!

Ingredients:

  • 1 lb lean ground meat of choice (I prefer grass fed beef but ground chicken and turkey also work)
  • 1-2 cups white beans, cooked
  • 2 medium sweet potatoes
  • 1 red bell pepper, chopped
  • 1/2 large onion, diced
  • 2 medium tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder (use more for a spicier chili)
  • 1/4 teaspoon salt
  • 2 1/2 cups water (or low sodium broth of choice)
  • 1 cup tomato sauce
  • 1/2 cup chopped fresh cilantro

Steps:

  1. Brown meat in a skillet.
  2. In slow cooker combine all other ingredients (add meat once it is cooked).
  3. Cook chili on low heat in crock pot 4-6 hours (or on high to speed things up a bit) or until potatoes become tender. *This can also be made on the stove top if you don’t have time to let it cook for 4-6 hours. Simply combine ingredients in a large pot as directed then simmer on medium/low heat until potatoes become tender, about 1 hour.*
