Stuffed Chicken

This Stuffed Chicken is a go-to dinner when we have last minute dinner guests and I need something quick and simple to prepare that looks and tastes like I spent all afternoon in the kitchen.

Ingredients

For the Marinade 

  • 4 chicken breasts (I use organic)
  • 1/4 cup white wine vinegar
  • 1/4 cup avocado oil
  • 1 tbs dried basil
  • 1 tsp garlic powder
  • 1/2 tsp sea salt

For the Stuffing

  • 1/2 cup sundried tomatoes
  • 1/4 cup onion, chopped (red, white or sweet are all fine) OR 3 cloves garlic
  • 3 tablespoons capers
  • About 2 large handfuls fresh spinach

Steps:

  1. Combine marinade ingredients and marinate chicken at least 4 hours or overnight.
  2. Combine stuffing ingredients in food processor and pulse until finely chopped OR finely chop by hand. Use garlic or onions depending on taste preference and ingredients on hand.
  3. With breast lying flat on cutting board, insert knife into thickest end of breast then insert fingers and create a small cavity the entire length of breast. Repeat for all 4 breasts
  4. Divide stuffing ingredients into 4 equal portions and stuff each breast
  5. Grill or bake until done- My family prefers these on the grill, cooked on medium heat about 20 minutes, flipping halfway through, however they can also be baked in 350 degree oven, about 30 minutes.
  6. If preparing only 2 breasts, cut marinade ingredients in half and proceed. These do make great leftovers for the next day’s lunch or a quick dinner.
