Pork and Beans

Ah legumes- The perfect combination of protein and fiber-packed carbs! In addition to being nutritional powerhouses, legumes are also incredibly affordable and easy to prepare. Oh, and did I mention that they come in a wide variety of shapes, sizes, and flavors? I came up with this recipe one night while in a hurry to prepare dinner and simply tossed together a bunch on ingredients that I happened to have in the freezer, fridge, and pantry. Feel free to use your bean(s) and meat of choice to create your own version of this great dish!

Ingredients:

  • 1 pork roast, cubed (about a pound)
  • 1.5 cups cooked black beans (or use 1 can)
  • 1.5 cups cooked pinto beans (or use 1 can)
  • 1.5 cups corn (organic)
  • ½ cup onion, chopped
  • ¼ cup fresh cilantro (or use dried if necessary)
  • 1 large tomato or 2 roma tomatoes, chopped (canned tomatoes also work)
  • 1 bell pepper, chopped
  • 1 small green chili
  • ½ tsp red chili flakes
  • ½-1 cup water or broth (just enough to cover the bottom of crock pot and prevent ingredients from getting too dry while cooking)

Steps:

  1. Cook cubed pork in crock pot ahead of time, about 2 hours. Drain liquid (and rinse if necessary).
  2. Add all other ingredients, stir, and cook on medium heat about 2 hours or until done.
  3. Serve with a side of rice or serve in lettuce romaine lettuce leaves. Top with chopped avocados, salsa, or hot sauce.
