Paleo Snickerdoodle Cookies

Do you remember when I said I would marry THESE cookies if I could? Well I’ve changed my mind. These Snickerdoodles have stolen my heart! That actually makes sense because I used my Chocolate Chip Cookie recipe as a cheat sheet when I came up with these Snickerdoodles. Its a darn good thing these cookies are healthy because I Can’t. Stop. Eating. Them! Soft, chewy, cinnaminny (thats a word… trust me) Paleo goodness. Mmmmmm.

Ingredients: 

  • 1.75 cup almond flour
  • 1.5 tbs coconut flour
  • 3/4 tbs cinnamon
  • 1/2 tsp sea salt
  • 1/4 tsp baking soda
  • 1/3 cup coconut oil
  • 1/4 cup honey or coconut sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1 tsp cinnamon
  • 1tsp granulated sweetener of choice (coconut sugar, Swerve, granulated stevia, or organic cane sugar all work)

Steps:

  1. Preheat Oven to 350 degrees
  2. Combine wet ingredients and mix well.  
  3. Stir in dry ingredients and mix well to combine.
  4. Form into balls and place in large flat tupperware or baking dish. Sprinkle 1 tsp cinnamon and 1 tsp granulated sweetener over balls with fingers (using fingers creates a finer dusting than just dumping it in and will allow it to spread more evenly). Roll balls around until evenly covered with cinnamon/sweetener.
  5. Place on cookie sheet and flatten with the palm of your hand.
  6. Bake about 8-10 minutes until golden brown
  7. Try not to eat the whole batch in one sitting
