Paleo Chocolate Chip Cookies

I. Love. These. Cookies. I would marry them if I could (if I weren’t already happily married of course… and if they weren’t cookies). Soft, chewy, and just sweet enough to do the trick. Oh and did I mention they’re Paleo? And gluten-free? And delicious?

Ingredients: 

  • 1.25 cup almond flour
  • 1/2 cup coconut (unsweetened, shredded)
  • 1/2 cup chocolate chips (Enjoy Life brand is dairy and soy free)
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1 egg (you can omit this for a flatter cookie… adding the egg makes for a fluffier cookie. The general consensus around our house is to keep the egg in).

Steps:

  1. Preheat Oven to 350 degrees
  2. Combine wet ingredients and mix well.  
  3. Stir in dry ingredients and mix well to combine.
  4. Form into balls, place on cookie sheet and flatten with spoon, spatula or fingers
  5. Bake about 8-10 minutes until golden brown
  6. Try not to eat the whole batch in one sitting
