This quick and easy Paleo dish makes a great last minute dinner that will taste like you spent all afternoon preparing it!
Ingredients
Marinade
- 2 organic chicken breasts, cut into equal sized portions (or about 4-6 thighs)
- 2 small oranges (mandarins)
- 2 cloves garlic, chopped
- 1 tbs coconut aminos
- 1 tbs avocado oil or other high heat liquid oil for marinating
- ¼ tsp sesame oil
Veggies
- Shitaki mushrooms (omit for FODMAP)
- Broccoli (omit for low FODMAP)
- Carrots
- Nappa Cabbage or bok choy
- Green onions
Steps:
- Marinate chicken in juice of one orange, chopped garlic, coconut aminos, and oil for a minimum of 2 hours (or overnight). Reserve remaining marinade.
- Chop veggies
- Heat about ½ tbs high heat oil in pan and cook chicken. When chicken is cooked, add chopped veggies and remaining marinade and cook, stirring frequently about 7-10 minutes.
- Top with cashews (pictured) or sesame seeds.
