Italian Chicken and Veggies

This basic recipe is a great weeknight meal option for those days when you just don’t have time to prepare an elaborate dinner, but don’t want to skimp on flavor (or nutrition!).

Ingredients 

Marinade

  • 1/4 cup avocado oil
  • 1/4 cup white wine vinegar
  • 1 tbs Italian seasoning blend
  • 1 tsp granulated garlic
  • 1 tsp onion powder

 

  • 2 chicken breasts
  • About 2 cups chard, chopped
  • 2 crookneck squash (zucchini will work also)
  • About 1/3 of a red onion, chopped (use more or less as desired)
  • Handful of cherry tomatoes
  • 1-2 tbs capers

 

Steps:

  1. Combine ingredients for marinade and add chicken breasts (this can be done the night before or morning that you plan to prepare this meal). Do not discard marinade.
  2. Grill or bake chicken as desired (if grilling cook about 8 minutes each side. If baking, place in 350 degree oven and bake about 50 minutes or until juices run clear)
  3. Chop chard, crookneck, and onions
  4. In a saucepan, add the marinade that was used for the chicken. Bring to a simmer on medium heat. Add chopped veggies, tomatoes and capers and cook, stirring frequently until squash just becomes tender (about 5 minutes)
  5. Serve chicken over the veggies
