Gluten-Free Oatmeal Cookies

This is a simple gluten-free cookie recipe for the kiddos! While our house is 100% gluten-free and mostly Paleo, we do allow our daughter to eat the occasional (gluten-free) grains. I came up with this recipe looking for a simple treat to give to my daughter and share with friends and family. With only 1 tablespoon each of honey and molasses, it is a low in sugar and makes a great gluten, dairy and soy-free snack or treat!

Ingredients: 

  • 1 small banana
  • 1/2 cup coconut oil, melted
  • 1 egg
  • 1 tbs molasses
  • 1 tbs honey
  • 2 cups gluten-free oats
  • 1/4 cup raisins
  • 1/4 cup chocolate chips (Enjoy Life brand) OR omit chocolate and double amount of raisins
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/4 tsp cinnamon (optional)

Steps:

  1. In food processor, pulse raisins, chocolate chips and oats until finely chopped (this step is optional, however I’ve found it makes for a great texture and tends to spread the sweetness from the chocolate and raisins throughout the recipe, allowing you to use less of the sugary ingredients while still getting a tasty cookie).
  2. Transfer dry ingredients to a bowl and add baking soda, cinnamon and salt.
  3. Add banana, melted coconut oil, egg, honey and molasses to food processor and puree until smooth.
  4. Add wet ingredients to dry and stir until well mixed.
  5. Form into balls and flatten on the baking sheet (these won’t flatten much on their own while baking).
  6. Bake about 6-8 minutes or until golden brown (longer if you prefer your cookies crispy)
