Do you remember when I said I would marry THESE cookies if I could? Well I’ve changed my mind. These Snickerdoodles have stolen my heart! That actually makes sense because I used my Chocolate Chip Cookie recipe as a cheat sheet when I came up with these Snickerdoodles. Its a darn good thing these cookies are healthy because I Can’t. Stop. Eating. Them! Soft, chewy, cinnaminny (thats a word… trust me) Paleo goodness. Mmmmmm.
Ingredients:
- 1.75 cup almond flour
- 1.5 tbs coconut flour
- 3/4 tbs cinnamon
- 1/2 tsp sea salt
- 1/4 tsp baking soda
- 1/3 cup coconut oil
- 1/4 cup honey or coconut sugar
- 1/2 tsp vanilla
- 1 egg
- 1 tsp cinnamon
- 1tsp granulated sweetener of choice (coconut sugar, Swerve, granulated stevia, or organic cane sugar all work)
Steps:
- Preheat Oven to 350 degrees
- Combine wet ingredients and mix well.
- Stir in dry ingredients and mix well to combine.
- Form into balls and place in large flat tupperware or baking dish. Sprinkle 1 tsp cinnamon and 1 tsp granulated sweetener over balls with fingers (using fingers creates a finer dusting than just dumping it in and will allow it to spread more evenly). Roll balls around until evenly covered with cinnamon/sweetener.
- Place on cookie sheet and flatten with the palm of your hand.
- Bake about 8-10 minutes until golden brown
- Try not to eat the whole batch in one sitting
