I. Love. These. Cookies. I would marry them if I could (if I weren’t already happily married of course… and if they weren’t cookies). Soft, chewy, and just sweet enough to do the trick. Oh and did I mention they’re Paleo? And gluten-free? And delicious?
Ingredients:
- 1.25 cup almond flour
- 1/2 cup coconut (unsweetened, shredded)
- 1/2 cup chocolate chips (Enjoy Life brand is dairy and soy free)
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup coconut oil
- 1/4 cup honey
- 1 tsp vanilla
- 1 egg (you can omit this for a flatter cookie… adding the egg makes for a fluffier cookie. The general consensus around our house is to keep the egg in).
Steps:
- Preheat Oven to 350 degrees
- Combine wet ingredients and mix well.
- Stir in dry ingredients and mix well to combine.
- Form into balls, place on cookie sheet and flatten with spoon, spatula or fingers
- Bake about 8-10 minutes until golden brown
- Try not to eat the whole batch in one sitting
