19 Dec Italian Chicken and Veggies
This basic recipe is a great weeknight meal option for those days when you just don’t have time to prepare an elaborate dinner, but don’t want to skimp on flavor (or nutrition!).
Ingredients
Marinade
- 1/4 cup avocado oil
- 1/4 cup white wine vinegar
- 1 tbs Italian seasoning blend
- 1 tsp granulated garlic
- 1 tsp onion powder
- 2 chicken breasts
- About 2 cups chard, chopped
- 2 crookneck squash (zucchini will work also)
- About 1/3 of a red onion, chopped (use more or less as desired)
- Handful of cherry tomatoes
- 1-2 tbs capers
Steps:
- Combine ingredients for marinade and add chicken breasts (this can be done the night before or morning that you plan to prepare this meal). Do not discard marinade.
- Grill or bake chicken as desired (if grilling cook about 8 minutes each side. If baking, place in 350 degree oven and bake about 50 minutes or until juices run clear)
- Chop chard, crookneck, and onions
- In a saucepan, add the marinade that was used for the chicken. Bring to a simmer on medium heat. Add chopped veggies, tomatoes and capers and cook, stirring frequently until squash just becomes tender (about 5 minutes)
- Serve chicken over the veggies
