This chia pudding is a staple in our home. Our 1 1/2 year old daughter just can’t seem to get enough of this simple recipe. As a mama, I love the fact that it is SO nutritious and easy to prepare! Note- if you allow the littles to feed themselves they may end up with pesky little chia seeds all over themselves. They’ll have fun, but you will be finding sticky little chia boogers around the house for hours after.
Ingredients:
- 2 cups milk of choice (I prefer my homemade coconut milk, recipe found here)
- 1/2 cup chia seeds
Optional Add Ins:
- Dab of honey or maple syrup OR pinch of stevia
- Blueberries, strawberries, raspberries or fruit of choice
- 1-2 tbs peanut butter (blend in milk first, then add chia)
- 2 tbs cocoa powder + 1 tbs honey or stevia to taste
Steps:
- Add chia seeds to milk. Stir well. Let sit overnight in fridge (a mason jar with a lid tends to work really well for this recipe).
- For a smooth pudding you can run through blender, then let sit over night.
