Mama’s Muffins

Sometimes Mama needs a treat too and sometimes eating the leftover crumbs off the kiddo’s plate just doesn’t really do the trick. My ideal treat would be a rich dark chocolate flavor, that isn’t too sweet. It would have a good amount of protein and fiber, some fat, and not too many carbs or sugar. This treat would leave me feeling satisfied, rather than racing back into the kitchen every 5 minutes to scarf down another until all the treats were gone. With these things in mind, I created Mama’s Muffins. My go-to treat when a chocolate craving hits!

Ingredients: 

  • 1/2 cup unsweetened cocoa powder
  • 2 tbs coconut flour
  • 1/2 tsp baking powder
  • About 1/8 tsp stevia (amount may vary by brand. I used Trader Joes organic stevia in the little 1 oz container. You can use more for sweeter flavor or replace with 2-3 tbs honey or maple syrup if desired).
  • 1 banana
  • 4 eggs
  • 1 tsp vanilla
  • About 1/8 tsp salt
  • 1/2-1 oz dark chocolate, chopped (I use Trader Joes Dark Chocolate Lovers chocolate bar. Its about 80% dark and it comes in handy little squares. I simply break off a couple squares and chop with a knife or toss in food processor. You can also just use a small handful of chocolate chips).

Steps:

  1. Preheat Oven to 350 degrees
  2. Combine wet ingredients and banana in food processor and puree. If you don’t have a food processor, chop banana then mix with a hand mixer or puree in blender until all lumps are gone. 
  3. Add in dry ingredients and mix well to combine.
  4. Line muffin tin with 6-9 liners (depending on size of muffins) then fill each with equal amounts of batter
  5. Bake about 20-23 minutes until toothpick inserted comes out dry and tops spring back when gently pressed.
