Mushroom and Zucchini Pizzas

We were craving pizza in the Kremer household one night and I just didn’t have the energy to whip up a Paleo Pizza crust. I also happened to have A LOT of mushrooms and zucchini that needed to be used up… and that is how this recipe came about. This will fill your home with the wonderful smell of pizza, but with a fraction of the calories.

Ingredients 

Filling

  • 1 pound ground turkey, beef or wild game
  • 1 egg
  • 1/2 red bell pepper, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1/2 cup sun dried tomatoes (I used the dehydrated kind in the bag from Trader Joes)
  • 1/4 cup nutritional yeast
  • 2 tbs tomato paste
  • 2 tbs onion, dried (you can also use about 1/2 cup onion. I used the dried to keep these from getting soggy from too many veggies.)
  • 2 tbs jalapeño pepper, very finely chopped
  • 1.5 tbs flaxseed, ground
  • 1 tbs basil, dried
  • 1 tbs oregano, dried
  • 1 tsp garlic powder
  • 1-2 tsp red chili flakes (use more for extra spice)
  • 1/4 tsp salt
  • About 8-10 medium mushrooms (crimini or white)
  • About 4-6 medium zucchini

 

Steps:

  1. Preheat oven to 350
  2. After finely chopping peppers and jalapeño, add to ground meat. Stir in all other ingredients and mix well.
  3. Remove stems from mushrooms
  4. Use a small knife to slice zucchini vertically, then scoop out the inside to allow room for filling
  5. Fill mushrooms and zucchini with ground meat mixture
  6. Any extra meat mixture can be formed into balls or patties
  7. Bake in 350 degree oven about 20 minutes
