Meatloaf

Who doesn’t love meatloaf!?! Ok… you got me… this meaty, loaf-shaped popular dinner option is typically not everybody’s favorite. This meatloaf recipe is simple, flavorful and incredibly healthy. Enjoy!

Ingredients

  • 1 lb organic/grassfed meat of choice (I prefer beef)
  • 2 tbs ground flax
  • 1 small zucchini
  • 1 medium tomato
  • 1 handful spinach (use more if desired)
  • ¼ cup fresh basil (1-2 tsp dried can also be used)
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup organic ketchup (optional)

Steps:

  1. Combine everything but the meat and ketchup in a food processor until well chopped (not quite pureed)
  2. Add meat and stir well
  3. Bake in 350 degree oven for about 1 hour, adding the ketchup to the top in the last 15 minutes of baking*TIP I used to find that my bagged spinach would occasional spoil before it would find its way into a smoothie, salad or unsuspecting meat dish like this meatloaf. If you find that your greens also go bad before you use them simply toss them in the freezer to use at a later date. This way your greens can still be used for smoothies, casseroles and any other dish that you want to toss them in (except for salads of course.)
