Fig Bon Bons

I didn’t eat my first fig until I was 30 years old…. This is sad for a number of reasons but most importantly the fact that I went 30 long years without eating one of these delicious bites of heaven makes me realize how deprived my younger years were. Unfortunately, I happen to be most partial to dried figs which, like all dried fruit, tend to equate to more sugar being consumed because it’s much easier to eat more than just one. The solution- blend them up with some satisfying nuts and a little coconut oil and you’ve got one satisfyingly sweet, yet filling snack. Oh, and did I mention these little treats are super easy to make and require no baking?!

Ingredients

  • 2 cups raw cashews
  • 5 dried figs
  • 1/2 tsp ground ginger
  • 1 tbs coconut oil, melted
  • 1 tbs lemon juice (fresh if possible)
  • dash salt (optional)

Steps:

  1. Add all ingredients to food processor, pulse until well blended and of a course consistency.
  2. Form into balls and enjoy!
  3. Store in the fridge for best results.
