Broccoli Beef

This broccoli beef makes for a simple weekday dinner that won’t break the bank and will make it easy to maintain your Paleo Lifestyle.

Ingredients

  • About 1 pound beef cut into equal sized portions(stew meat, flank steak or other steak of choice can be used)
  • 2-3 cups baby broccoli aka broccolini (regular broccoli can also be used)
  • 1 sweet potato, made into ‘noodles’ with a mandolin
  • sesame seeds to top

    For the Marinade

  • Juice of 1 large orange
  • 1/4 cup oil
  • 1/4 cup white cooking wine
  • 2 tbs coconut aminos
  • 1 tsp fish sauce
  • 1 tbs fresh ginger, minced
  • 2 large garlic cloves, minced

Steps:

  1. Marinate beef atleast 2 hours or overnight.
  2. To cook sweet potato: Peel sweet potato then bake at about 350 degrees, 10 minutes (you can skip this part but it makes it much easier to shred into noodles if it’s a little tender). Add a small amount of oil to pan and toss in “noodles”. Cook, stirring constantly until done, about 8 minutes, on medium heat.about ½ tbs cooking oil in a pan and cook beef until done (depending on how “done” you want it).
  3. Heat about ½ tbs cooking oil in a pan (I use a cast iron skillet) and cook beef until done (depending on how “done” you want it).
  4. When beef is almost done, add broccolini and cook, stirring frequently until just tender. Top with sesame seeds if desired.
