Paleo Cranberry Trail Mix Bars

So my kiddo and I were shopping the other day and I promised her a treat from Whole Foods for being such a good little munchkin. Let me just say- there is a reason why so many refer to this lovely store as “Whole Paycheck”. And, being “thrifty” (some may call me cheap) I could not bring myself to pay $8 for a small box of gluten free cookies that still had a bit more sugar than I like to give to the kiddo. SO I grabbed her a piece of fruit and told her we were going to make ourselves a treat when we get home. At that point she was so tired that she didn’t even care so while she went down for her nap, mama got to baking. This was one of those recipes that was created by me literally just tossing a bunch of ingredients into my food processor and saying a little prayer. It worked! These were a hit in our home and are now a staple. They make a great snack and an awesome take-along for those outdoor adventures!

Ingredients: 

  • 1 egg
  • 1 small banana
  • 1/2 cup cranberries (sweetened)
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1 1/2 cup coconut, unsweetened
  • 3 tbs chia seeds

 

Steps:

  1. Preheat oven to 350.
  2. Add all ingredients to food processor and pulse until chopped and well mixed. 
  3. Spread mixture out onto cookie sheet to be cut into bars or form into balls then flatten into patties (or just leave them as balls if you wish) 
  4. If making them into bars, after baking for about 4 minutes remove from oven, cut into bars, and pop them back into finish baking for another 3-4 minutes.
  5. Bake about 7-8 minutes (do not over bake)
