Paleo Chocolate Chip Cookies (low carb, low sugar)

I have a problem. I LOVE cookies. Like… make a batch and eat them ALL in 20 minutes… kind of problem. Thus, I’ve come to the conclusion that I’m either going to A) always be about 10 pounds heavier than I’d like or B) need to come up with some healthier cookie options. Of course there is always option C) gain a little self control, however being Paleo, gluten-free, dairy-free mostly organic and fairly low carb, I’m pretty tapped out in the self control department! With that I bring you my low carb, low sugar, rather amazeballs coconut flour chocolate chip cookie recipe. No, this isn’t your mama’s chocolate chip cookie; however for me it does the job. Recipe makes about 7 cookies at around 100 calories per cookie. Enjoy!

Ingredients: 

  • 2 eggs
  • 2 tbs coconut oil
  • 1 tbs raw honey, optional (1 tbs Swerve sweetener also works. As does a pinch of stevia)
  • 1/3 cup coconut flour
  • 1/4-1/3 cup semi-sweet chocolate chips
  • 2 tsp vanilla extract
  • pinch salt

 

Steps:

  1. Preheat oven to 350.
  2. Add wet ingredients to bowl and stir well. 
  3. Add in remaining ingredients and stir well. You can also use a food processor to mix. I prefer the food processor as it chops the chocolate chips, more evenly dispersing the chocolate throughout the cookies. 
  4. Form into balls, flatten into patties and place on cookie sheet (these can be baked as bon bons or flattened out into a cookie).
  5. Bake about 10 minutes.
